The cattle are raised stress-free in the tropical climate and in a warm environment, so the meat is not too fatty and has a light texture.The restaurant uses "specially selected" Ishigaki beef with a yield grade of "A" or "B" and meat quality grade of "grade 4" or "grade 5"!
